Newbee here.
I have 5 separate tasks with each having 3-5 subtasks that I want to get done over the next 1-2 weeks. These are 1 time tasks.
However, these are tasks that I have procrastinated many times and now I dread even starting them. how is the best way to set them up in Beeminder? I have a free plan now but am open to upgrading my plans. Thanks!

Otherwise, a few options:

Something like How To Beemind Nebulous Goals | Beeminder Blog with a rule to yourself that you’re only going to write something if you actually do a subtask.

A straightforward do-more goal for “subtasks complete”

A do-more for hours spent on the list.

A goal with slope 1/day which is just “enter 1 if I did anything toward the task list today”, if you feel like the lower pressure might actually be better.
