How does beeminder make sure emailed data is legit? Can someone spoof email beeminder with a From header matching your email address to make your goals derail?
Is there a way for me to authorize or prevent others from entering data for me?

You don’t have to spoof anything actually. It will enter the data irrespective of the address.
But it will in it’s reply address this and instruct you how to undo it and to ignore future updates from that address IIRC.
